The vineyards extend across the “Castelli Romani” region to the south of Rome. Antonio Pulcini selects only hillside sites to work with and for Frascati he looks for a high percentage “Malvasia del Lazio” which is of better quality in this area. He works closely with the grape growers, encouraging them to abandon synthetic agrochemicals and to switch to organic products. Not all growers are up to Antonio’s high standards so it is seen as an honour to be chosen to supply grapes to Colli di Catone.
Colle Gaio is produced only from the company’s own vineyard, which is managed with the utmost care and attention, using methods inherited from generations past. Short spur pruning and severe summer bunch thinning reduce yields to a mere 20 hl/ha. The volcanic soil is rich in potassium, phosphorus and other elements, helping to give character to the wine and nourishing the vines naturally. This type of soil is ideal for grapevines as it drains well but retains enough moisture to protect the vines from extreme summer drought.
